It starts with a package of tortellinis in your favorite flavor. I chose spinach and cheese but you can do it with any variety – even the ones with chicken, beef, or sausage – to create your own tortellini casserole.

All you do is put everything into your casserole dish and voila! In about 20 minutes, it will be ready to serve in all its cheesy, saucy glory! Pair it with a crisp green salad and some crispy garlic bread for a full meal.

Ingredients for this Easy Tortellini Recipe

Tortellini: As I mentioned, you’ll use a package of tortellini, the kind you get from the refrigerated section. These can be put directly into the sauce in your casserole dish – you don’t have to cook them in advance as they are pre-cooked and hence, come out with the perfect texture in this recipe.

Cherry tomatoes: I love adding cherry tomatoes to this Baked Tortellini Casserole. They bring a lovely sweet taste and freshness to the dish.

Mozzarella: When you think of pasta dishes, mozzarella is one of the best cheeses to add. Since it has a mild flavor, it pairs best with the tomato sauce. Using the fresh mozzarella balls is going to give this the most authentic flavor. It’s worth the extra cost!

Cream: Cream will make your sauce richer and more dreamy in texture. You can use half-and-half if you prefer though don’t go with regular milk for it just won’t give you the same creamy mouthfeel.

Step 1:
Start the oven preheating to 400°F, then mix the sauce right into your 9×13-inch baking dish. You’ll do this by adding the cream, tomato paste, garlic, and spices, stirring it around.

Step 2:
Now you’ll place your tortellini into the sauce. Don’t just pour them in though – place them side by side to create an even layer.

Step 3:
Top the tortellini with your halved cherry tomatoes and the mozzarella cheese.

Step 4:
Bake your casserole for 20 minutes. It should be light golden brown on top. Once you pull it from the oven, you can garnish it with the chopped chives before serving.

Ingredients
  

  • 9 oz (250 g) package of refrigerated tortellini - such as spinach and cheese
  • 1 cup (150 g) cherry tomatoes - halved
  • 4 oz (125 g) fresh mozzarella ball - you can use sliced or shredded
  • 1 cup (250 ml) light cream or half-and-half
  • 2 tablespoons tomato paste
  • 1 clove garlic - minced
  • 1 tablespoon chopped chives - fresh or frozen

Spices

  • 2 pinches of salt, ground black pepper, and paprika powder

Instructions

  • Preheat the oven to 400 °F (200 °C).
  • Mix the sauce directly in a baking dish or casserole dish (9x13-inch). Add light cream, tomato paste, garlic, and spices.
  • Place the tortellini side by side into the sauce. Top with tomatoes and mozzarella.
  • Bake for 20 minutes, or until light golden brown on top. Garnish with the chopped chives and serve.
