Cherry tomatoes: I love adding cherry tomatoes to this Baked Tortellini Casserole. They bring a lovely sweet taste and freshness to the dish.

Step 1:

- 1 cup (150 g) cherry tomatoes - halved
- 4 oz (125 g) fresh mozzarella ball - you can use sliced or shredded
- 1 cup (250 ml) light cream or half-and-half
- 2 tablespoons tomato paste
- 1 clove garlic - minced
- 1 tablespoon chopped chives - fresh or frozen
Spices
- 2 pinches of salt, ground black pepper, and paprika powder
Instructions
- Preheat the oven to 400 °F (200 °C).
- Mix the sauce directly in a baking dish or casserole dish (9x13-inch). Add light cream, tomato paste, garlic, and spices.
- Place the tortellini side by side into the sauce. Top with tomatoes and mozzarella.
- Bake for 20 minutes, or until light golden brown on top. Garnish with the chopped chives and serve.
