Tortellini Pasta Salad with Pesto (Quick & Easy)
For my tortellini salad with pesto, you only need 4 ingredients. The recipe is easy to prepare and delicious both warm and cold. The salad is perfect for summer grilling and can be on the table in just 10 minutes.
Ingredients for the quick tortellini salad recipe:
- Tortellini, refrigerated
- Cherry tomatoes
- Mini mozzarella balls
- Basil Pesto
You can find tortellini in various varieties in the refrigerated section. They are pre-cooked and therefore particularly quick to prepare. Some supermarkets even carry vegan tortellini.
Cherry tomatoes are particularly flavorful and sweet. Therefore, it is best not to replace them with other tomatoes.
In theory, you could also use regular mozzarella and tear it into small pieces. However, the mini mozzarella balls add a nice touch to this salad, don’t they?
For this recipe, I used basil pesto. The salad also tastes delicious with sun-dried tomato pesto.
Here’s how to prepare the tortellini pasta salad:
Step 1: First, cook the tortellini according to the package instructions and then rinse it with cold water.
Step 2: Meanwhile, you can halve or quarter the cherry tomatoes. Drain the mini mozzarella balls and cut them in half.
Step 3: Finally, mix the cold or lukewarm tortellini with the basil pesto. Also, briefly stir in the tomatoes and mozzarella.
Step 4: For those who like it, the salad can be optionally served with some fresh basil.
